Ingredients

  • Large eggs – 8
  • Milk – 1/2 cup
  • Mozzarella cheese – 1 cup
  • Goat cheese – ½ cup
  • Cherry tomatoes – ½ cup
  • Bell pepper – ½ cup, different colors
  • Butter – 1 tablespoon
  • Herbs – 1 teaspoon
  • Salt – to taste
  • Red pepper flakes
  • Ground black pepper

Cooking method

  1. Preheat the oven to 400 degrees F.
  2. Whisk eggs, heavy cream, and salt together until you get a smooth texture. Set them aside.
  3. Chop the vegetables. Boil some vegetables like kale, broccoli, and others. You don't need to boil bell peppers and tomatoes. You can use mushrooms, jalapenos, or olives straight from the can.

How to check if frittata is done:

  • Notice the center and edges of the frittata and see if they are still jiggly or not. If they are not and turn light golden in color then it is done.

  • You can use a thermometer to check the temperature. When the internal temperature becomes 160 degrees F, it is done.

Storing

You should first cool the frittata after taking it out from the oven and then slice it. Use a plastic wrap to cover the slices. Then put them in an airtight container. You can refrigerate it for up to 4 days. Before eating the refrigerated frittata you need to reheat it in the microwave.

Tips

  • If you want to omit dairy, then you can do so. However, the frittata will taste more eggy and less creamy.
  • It will be convenient for you to precook the vegetables.
  • Grease the baking pan; otherwise, frittata might stick to the pan.
  • It is better to cook the vegetables before pouring the egg mixture over them. Some vegetables tend to be watery, like spinach. So, if you don't cook it before, it will release water into the egg mixture making it watery.
  • Season and saute the veggies before adding the egg mixture.
  • Make sure your skillet is oven-safe and nonstick. It is best to use a cast iron skillet.
  • Add pesto sauce or warm salsa to spice it up.
